In a pot of boiling salted water, cook the Haiku green tea Asian noodles for 3 minutes. Rinse under cold water and drain.
Whisk together the ingredients for the sauce in a salad bowl.
Add the noodles, carrots, baby spinach, red cabbage, peppers and red onion into the salad bowl. Pepper to taste. Mix well.
Serve the salad in the dishes and garnish with peanuts and coriander.
