Preparation

  • In a medium size bowl, whisk the eggs with the Haiku coconut milk, lime zest, cardamom and sugar

  • Soak the slices of bread in the coconut milk mixture for approximately 8 minutes, turning them after 4 minutes.

  • In a saucepan, melt the butter over medium heat. Drain the slices of bread and put them in the pan. Cook on each side for 2 minutes, until golden brown.

  • Garnish with raspberries.
