Heat the canola oil over medium heat in a pan. Fry the onion for 1 to 2 minutes.
Add the rest of the ingredients for the broth. Bring to a boil and let simmer for 20 minutes on medium heat.
At the same time, cook the Haiku Asian noodles according to package directions.
Slice the beef into thin strips of approximately 0,5 cm (1/4 in.) thick.
Filter the broth by pouring it through a fine sieve over a bowl, then pour it back into the pan. Bring the broth back to a boil.
Divide the noodles, beef strips, bean sprouts, baby spinach and green onion into the four bowls. Cover with the hot broth and serve with a lime quarter.
