Preparation
- Heat sesame oil in a pot over medium heat, add the minced meat and cook until browned. 
- Stir in the sliced canned shiitake mushrooms and cook for 1-2 minutes until heated through. 
- Pour in water & broth and bring to a boil. Stir in the kimchi and soy sauce, letting it simmer for 2 minutes to infuse the flavour. 
- Add the ramen noodles and the tofu to the pot. Simmer for 3-4 minutes until the noodles are tender. 
- Divide the noodles and soup into bowls. Garnish with chopped green onions, a sprinkle of black sesame seeds, and extra kimchi on the side if desired.
