Preparation

  • Cook the Haiku Asian noodles according to package directions. Drain.

  • Mix the ingredients for the sauce in a bowl.

  • Sponge off the tofu using a paper towel, and cut the tofu in cubes.

  • In a pan, heat the oil over medium heat. Cook the tofu for 2-3 minutes, until golden brown.

  • Pour in the sauce and bring to a boil.

  • Add the Asian noodles and cook for 2-3 minutes.

  • Mix in the peanuts and coriander.
