Authentic Pad Thai

  • Cook Haiku rice vermicelli as per instructions, but only for 2 minutes.

    Drain and set aside.

  • In a wok, or a large skillet, heat 1 tbsp of oil on medium heat. Add the beaten egg while whisking gently and cook for about 20 seconds until lightly cooked.

    Remove from wok and set aside.

  • Heat the rest of the oil and stir-fry the meat (do not overcook).

  • Add the Haiku rice vermicelli, stir-fry sauce, cooked egg and green onions.

    Stir-fry for 3 to 4 minutes to heat thoroughly.

  • Before serving, add in bean sprouts and chopped peanuts.

  • Mix well and serve with your choice of garnish.

The meat can be replaced by shrimps, shelled and deveined, or with tofu for a vegetarian dish.
