Preparation
1. Preheat the oven to 375 degrees.
2. In a large bowl, add all the ingredients (except the rice) and mix.
3. In a separate bowl, separate the rice using your hands, add 1 tbsp water and heat in the microwave for 1 minute.
4. Layer the rice in a Pyrex dish and press firmly with a fork.
5. Add the mixture and flatten again.
6. Place in the oven for 15 minutes and broil for 2-3 minutes for a nicely toasted top.
7. Garnish with your choice of food, such as fresh avocado or cucumber, additional kimchi and sauces to taste. Serve on its own or with grilled nori seaweed.
