Preparation
- Mix all the sauce ingredients in a large bowl and set aside.
- In a skillet, cook the meat or plant-based substitute in vegetable oil, adding the remaining ingredients reserved for the meat (except for the kimchi) 2-3 minutes before the end of cooking. Once fully cooked, remove from heat and mix in the finely chopped kimchi.
- In a large pot bring water to a boil. Add the ramen noodles and cook for aprox 2 minutes. Add the bok choy and cook for an additional minute then drain both in a sieve.
- Add the noodles, bok choy, and meat to the bowl containing the sauce and stir together. Portion into bowls, sprinkle each plate with green onions and crushed peanuts. Finish by pouring aprox 1 tbsp of the heated broth onto each serving.
