Preparation
- In a large bowl, mix the shrimps, ginger, salt and pepper, and let marinate for 15 minutes. 
- Place flour, eggs and Panko in three separate bowls. 
- In a fryer, heat vegetable oil to 375 °F. 
- Bread shrimps by dipping them first in the flour, then the eggs and finally in the Panko. 
- Fry shrimps a few minutes each or until the batter is golden (about 5 minutes). Place cooked shrimps on a paper towel and serve with a spicy mayo. Garnish with chopped coriander.
