Preparation
In a pot of salted boiling water, cook the Haiku Green Tea Asian Noodles according to the indications on the package. Approximately 1 minute before noodles are cooked, add the zucchini noodles. Strain.
In the same pot, heat a little bit of olive oil on medium heat. Cook the cherry tomatoes, the noodles and the balsamic vinegar for 1 to 2 minutes. Salt and pepper, and stir delicately.
At time of serving, garnish with the smoked salmon, the parmesan and arugula.
