Salmon Burger with Ramen Noodle Buns

Preparation

  • In a bowl, combine the ingredients for the salmon patties. Shape two patties with the mix.

  • In a large skillet, heat the oil over medium-high heat. Brown the patties for 3 minutes on each side. Remove from heat and set aside.

  • In a bowl, combine the ingredients for the tzatziki sauce. Set aside in the refrigerator.

  • Heat the Haiku Pre-Cooked Ramen Noodles in the microwave according to package directions. Chop the noodles.

  • In a bowl, combine the ramen noodles with the egg and cheese. Stir well.

  • In a skillet, heat a little olive oil over medium-high heat. Place a round cookie cutter at the bottom of the pan, then add 125 ml (½ cup) of the noodle mixture inside. Cook for a few seconds until the mixture sets, then pull out the cookie cutter. Repeat step to shape the other three ramen patties.

  • Brown the ramen patties, 3 minutes per side, until golden and crispy. Drain and set aside on a plate lined with paper towel.

  • Place a ramen patty on a plate and top with the tzatziki sauce. Add a salmon patty and garnish with lettuce leaf and cucumber slices. Top the burger with a second ramen patty. Repeat for the second burger.
