Cook the Haiku rice noodles according to package directions. Drain.
In a bowl, mix the ingredients for the sauce. Put aside.
Using a pan or a wok, heat the oil over medium-high heat. Fry the shrimp for approximately 2 minutes. Add the mushrooms and water chestnuts. Heat for 2 minutes.
Add the sauce and heat to just before boiling.
Divide the noodles onto the plates. Top with the shrimp stir-fry. Sprinkle with sesame seeds and green onion.
