Turkey Curry with Asian Noodles

Preparation

  • Bring water to a boil in a large pot. Add the Haiku asian noodles and cook according to the package directions. Drain and set aside.

  • In a saucepan, heat oil over medium heat. Brown the turkey cubes for 3 - 4 minutes. Put on a plate and reserve.

  • In the same saucepan, cook the onion, garlic and ginger for 1 minute. Add the vegetables and continue cooking for 2 - 3 minutes.

  • Add the spices and heat for 30 seconds, just to release the aroma. Pour in the Haiku coconut milk and bring to a boil.

  • Add the Turkey cubes and cook for 6 - 8 minutes, until the meat is no longer pink.

  • Using the large pot, bring the chicken broth to a boil over medium heat. Add the asian noodles and reheat for 1 minute.

  • Put the asian noodles on plates and cover with the turkey curry. Garnish with coriander leaves.
