In a non-stick frying pan, heat a little bit of canola oil on medium heat. Cook the pork, a few strips at a time, for 3 to 4 minutes. Set aside in a dish.
In the same dish, cook the snow peas for 3 to 4 minutes. Set aside in the same dish as the pork.
In the same pan, heat a little bit of canola oil on medium-high heat. Reheat the Haiku Konjac Rice for 2 to 3 minutes while stirring.
Add the garlic, pork strips, snow peas and the soya sauce. Cook for another 1 minute while stirring.
Drizzle the beaten eggs over the ingredients. Cook for 1 to 2 minutes, until eggs are set.
Before serving, garnish with chives.
