Vegetarian Pad Thai

  • Cook the Haiku Asian noodles according to package directions. Drain.

  • In a bowl, whisk the eggs with the tofu. Salt and pepper.

  • In a large pan or wok, heat the olive oil over medium heat. Cook the egg mixture for 4 to 5 minutes while stirring, just until the eggs are set.

  • Add the snow peas, red pepper and sauce. Continue cooking for 3 minutes.

  • Add the Asian noodles and mix well.

  • When ready to serve, garnish with coriander and peanuts.
