Cook the Haiku Asian noodles according to package directions. Drain.
Mix the ingredients for the sauce in a bowl.
Sponge off the tofu using a paper towel, and cut the tofu in cubes.
In a pan, heat the oil over medium heat. Cook the tofu for 2-3 minutes, until golden brown.
Pour in the sauce and bring to a boil.
Add the Asian noodles and cook for 2-3 minutes.
Mix in the peanuts and coriander.
