In a large pot, combine all the ingredients for the broth. Bring to a boil then turn off the burner. Let stand for 30 minutes.
Filter the broth with a fine colander. Pour the filtered broth back into the pot. This broth is perfect for use in a fondue.
Add the chicken, kale and Haiku rice vermicelli to the broth. Salt and pepper. Store the soup in a cool place in air tight containers.
