Cook the Haiku Asian noodles according to package directions. Drain.
In a bowl, whisk the eggs with the tofu. Salt and pepper.
In a large pan or wok, heat the olive oil over medium heat. Cook the egg mixture for 4 to 5 minutes while stirring, just until the eggs are set.
Add the snow peas, red pepper and sauce. Continue cooking for 3 minutes.
Add the Asian noodles and mix well.
When ready to serve, garnish with coriander and peanuts.
