Cook the Haiku rice vermicelli according to package directions. Drain.
In a large skillet, heat a little olive oil over medium heat. Brown the cubes of tofu for 4 to 5 minutes on all sides.
Add the Haiku mixed Asian vegetables and stir. Cook for 1 to 2 minutes.
Transfer the vegetables and tofu preparation in a bowl. Add the rice vermicelli, dressing, and if desired, green onions. Stir.
Spread the mixture in the centre of the lettuce leaves. Fold the sides of the leaf over the filling, and roll tightly.
To prepare the sesame dip, mix all the ingredients of the dip in a bowl. Add salt and pepper to taste.
