Preparation

  • Cut the strawberries, mangoes, banana and drain the mandarins into pieces and set aside.

  • Add the steamed Haiku rice to a microwave-safe bowl and add 2 tablespoons of water. Heat for about 1½ minutes. Set aside until lukewarm. Then separate the rice into three equal parts.

  • Set a soy sheet on your bamboo mat, add and then spread a quantity of rice with your hands.
    *Tip: the rice is easier to spread on the soy sheet when your hands are moistened.

  • Add the fruit, then roll up the first roll using the bamboo mat. Repeat the process. The quantity of one bag of rice will allow you to create two large rolls or 3 smaller ones.

  • Then cut the rolls into several pieces to make sushi and place on your plate or serving platter.

  • In a small bowl, mix coconut milk blended with ¼ cup maple syrup to create the accompanying sauce. Add the bowl to your plate or platter.

  • Decorate with remaining fruit, mint leaves and enjoy!
