Preparation

  • Set-up: prepare and cut fruit, drain canned mandarins, etc.

  • Add the steamed Haiku rice to a microwave-safe bowl and add 2 tablespoons of water. Break up any stuck rice pieces with your hands to separate them well. Heat for about 1½ minutes. Set aside until lukewarm.

  • Separate rice into three equal parts.

  • On your bamboo mat, add a soy leaf and top with the rice. Tip: wet your hands lightly when handling the rice to help it stick to the seaweed or soy leaf.
