Preparation
1. Using a mortar and pestle, lightly mash the lemongrass sticks
2. Add all ingredients to a saucepan and bring it to a boil. Reduce temperature and cook for 15-20 minutes.
3. Lightly squeeze the mint leaves and lemongrass during cooking to extract their flavours.
4. Serve immediately or removing from the heat, then leave to temper for at least 2 hours for optimal flavour!
