Preparation
Preheat the oven to 205C (400F).
In a small bowl, combine the ingredients for the sauce. Pour 45ml (3 tbsp) of sauce in a large bowl and keep the rest of the sauce at room temperature.
To the large bowl, add the scallops, shrimp, pepper, panko, shallots, mayonnaise and egg yolk. Season and stir.
Make 12 small patties from the mixture.
Place the patties on a baking tray lined with parchment paper. Cook in the oven for 15-18 minutes, flipping the patties halfway through.
Serve the patties with the rest of the sauce.
