Preparation

  • Preheat the oven to 205C (400F).

  • In a small bowl, combine the ingredients for the sauce. Pour 45ml (3 tbsp) of sauce in a large bowl and keep the rest of the sauce at room temperature.

  • To the large bowl, add the scallops, shrimp, pepper, panko, shallots, mayonnaise and egg yolk. Season and stir.

  • Make 12 small patties from the mixture.

  • Place the patties on a baking tray lined with parchment paper. Cook in the oven for 15-18 minutes, flipping the patties halfway through.

  • Serve the patties with the rest of the sauce.
