In a bowl, combine all the ingredients for the sauce and mix.
In a pot of boiling water, cook the Haiku Asian-style noodles for 3 minutes. Drain.
In a frying pan, heat the sesame oil on medium heat. Cook shrimps for 1 minute on each side.
Add shallots, garlic and ginger. Cook for one 1 minute.
Add Haiku mixed Asian vegetables and cook for one more minute.
Add sauce and bring to a boil while stirring.
Before serving, garnish with coriander, green onions and sesame seeds.
