Miso Salmon with noodles salad and ponzu dressing

Preparation

  • Preheat oven to 205 °C (400 °F).

  • In a bowl, whisk together the ingredients for the dressing. Set aside.

  • In another bowl, mix the Haiku Miso Granules with the honey, mirin, lime juice, ginger and sesame oil.

  • On a baking sheet lined with parchment paper, place the salmon filets. Baste the filets with the miso mix. 

  • Cook in the oven for 15 to 18 minutes, until fish flakes easily with a fork.

  • Meanwhile, cook the Haiku Asian-style noodles and the broccoli for 3 minutes in a pot of salted boiling water. Drain and immediately rinse under cold water.

  • In a salad bowl, mix the noodles and the broccoli with the Chinese cabbage and the dressing.

  • Serve salmon filets with the noodles salad.
