Preparation
- In a large saucepan, bring the first eight ingredients to a boil. - Reduce heat to medium and simmer 3 minutes. 
- Add the chili, lime juice and zest. - Season to taste with salt and pepper. 
- Simmer for another 2-3 minutes, add the sweet peas and stir. - Remove from heat and add the green onions and bok choy. 
- Mix and wait one minute before serving.
