Preparation
In a food processor, combine vegetable broth, kimchi, sriracha and spices.
2. Bake fries according to package directions.
3. Prepare the sauce, starting with the roux. Melt butter over medium heat, then add flour. Whisk until flour and butter are smooth and lump-free.
4. Add the liquid kimchi mixture, previously blended in a food processor. Stir well and cook until the sauce thickens to your liking, about 4-5 minutes.
5. Combine the ingredients for the vegetable chopping sauce (teriyaki sauce, sriracha and soy sauce), then chop the vegetables (onions and mushrooms).
6. In a frying pan, sauté the onion for a few minutes in olive oil, followed by the mushrooms.
7. Add the chopped vegetables to the pan and cook according to package instructions. Once the mince is cooked through, add the sauce and cook for a further 1-2 minutes.
8. Assemble poutine by first adding waffle fries, kimchi sauce, cheese curds and veggie chop. Garnish with a touch of spicy mayo if desired, green onions and more kimchi.
