Preparation
In a large skillet, heat a little olive oil over medium-high heat. Cook a few shrimp at a time for 1 minute on each side. Set aside on a plate
In the same skillet, cook the vegetable mixture for 5 to 7 minutes, stirring occasionally, until the liquid has evaporated.
Add garlic and ginger. Continue cooking for 1 to 2 minutes.
Add rice and continue cooking for 4 to 5 minutes, stirring.
Return shrimp to pan, then add honey and soy sauce. Cook and stir for 1 to 2 minutes.
If desired, garnish with sesame seeds just before serving.
